Nothing screams "fish" like Fridays. Fish sticks are a thing of the past with these delicious options. And no one can think "fish" without thinking about salmon and tuna (grilled, baked, burgers or salad). But special mention goes to tuna salad, a crowd favorite and much debated topic any time of year. Next week, the Courier Cookbook will offer Sizzling Saturdays focused on steak recipes (any kind of meat or meat products are welcome). Send your recipes to editorial@lhvc.comeditorial@lhvc.com....

As Niwot's Sesquicentennial approaches on March 30, 2025, the ad hoc committee charged with coordinating a year-long celebration is hard at work on everything from lectures, to birthday parties, to puzzles, to time capsules. The committee, first suggested by the Niwot Local Improvement District Advisory Committee and Kathy Koehler of the Niwot Historical Society, is comprised of members representing Niwot's many non-profit organizations, including the Niwot Business Association, the Niwot...
Linda Vehrenkamp, owner of The Nook, has been a part of the Niwot community for 26 years, and 2025 marks her seventh year running the shop. Over the years, her store has become a beloved part of the Niwot Market, offering customers a diverse selection of gifts, home decor, and specialty items. Originally from Wisconsin, Vehrenkamp moved to Colorado and settled in Niwot, where being near Niwot Market inspired her to open a small shop. She spoke with Niwot Market founder Bert Steele about her...
In 2021, a couple of years after moving to Niwot, Hope Doty finally had met enough crafters in the area to get a group together as she missed participating in the group she had founded when she lived in Texas. She followed through on her friend Annie Enger's advice to speak with the manager of The Wheel House, who at the time happened to be a knitter as well. The outcome was the formation of the crafting group called "Crafts and Hooch" which meets once a month, on Thursday evenings after 5:00...
Although Oliver Sitja Sichel's main instrument is the clarinet, he can also play piccolo clarinet, bass clarinet, flute, oboe, and saxophone. "But I'm best at clarinet," Sichel confessed. "I learned to play in sixth grade by playing it through school and then I just kept on playing. What got me interested in clarinet was school. It was the instrument I was assigned in sixth grade and music has always interested me. So, it only made sense for me to continue with it." Wade Hendricks, the Director...

Local commuters and residents continue to feel the pain of simultaneous road closures associated not just with the CO 119 Safety, Mobility & Bikeway Project, but also with the additional Boulder County infrastructure work, including a sewage line replacement on 95th Street and two water line replacements at 63rd Street which also impact Jay Road. The latest closure that currently appears on the CDOT (Colorado Department of Transportation) website will occur on the Jay Road median that crosses...
Although he views himself as more of a role player, junior Henry Noblin's on-court contributions have been invaluable to the Niwot High School varsity boys basketball team. Noblin makes his presence felt most prominently on the glass, leading the Cougars with 4.8 rebounds per game through Feb. 11. The 6-foot-1 forward is also a menace to opposing ball-handlers, as he's averaging a team-high 1.3 steals per game. Niwot head coach Walker Bounds is among those who appreciate Noblin's willingness to...
Colorado House Bill 1169, known as “Housing Developments on Faith and Educational Land,” was introduced on Feb. 4, 2025, to the Colorado General Assembly by 14 Democrats as sponsors. It aims to make it easier to build housing on land owned by religious institutions, school districts, and state colleges or universities. The sponsors say the bill is part of an effort to address Colorado’s growing housing affordability crisis by allowing residential development on these properties, even if current zoning laws would not normally permit it. If pa...

The top 40 teams will qualify for the single-elimination state tournament, up from 32 teams last year. Niwot's regular season...
The Niwot High School varsity boys basketball team has suffered its fair share of defeats this season, but that hasn't kept head coach Walker Bounds and his players from approaching each game with intensity. Following a particularly heartbreaking loss at Frederick High School on Thursday, Feb. 13, Bounds credited his Cougars for staying locked in through a difficult stretch. "I've been really pleased with the way this team has handled adversity," Bounds said. "We've had a tough year and a...
