Niwot's newest food truck

Anyone looking for dining options while at The Wheel House or Whistlestop Park might have noticed there's a new food truck in town. In August, La Musette opened on Murray Street between the entrance to Wheel Works and the Post Office.

The truck features cuisine by chef Skyla Olds, who is a partner in the truck with Wheel House and Wheel Works owner Eric Bergeson. Named for a small bag of food that's handed to bike riders during large events like the Tour de France, it serves as the default kitchen for The Wheel House and is available for special events and for Covid-safe takeout.

Olds said it has been a great few months since the truck first opened. "The Niwot community is so amazing. People are coming by. Checking it out. Seeing what's going on. They're delightful and welcoming."

She said some nights are busier than others. "We're especially busy when there's an event in town, and on Tuesday nights there's a $12 dinner menu. And a three-course Sunday Supper, an appetizer, a plate, and a dessert for $20, and there's music in the Wheel House."

According to Bergeson, Olds was the perfect choice to lead the truck's operations. "Everything is locally sourced, extremely fresh. It's amazing the food she's putting out there. Customer response has been great as well."

Bergeson said he wasn't surprised by the response to Olds' food. "She's a fascinating individual. She grew up at a winery on the Oakville Grade between Napa and Sonoma that had a lot of winery dinners. She doesn't have a traditional culinary school background, but she grew up with this celebration of food."

La Musette serves a full menu of farm-to-table appetizers, main courses, and desserts and Olds varies her menu according to the season and to stay in sync with what's happening in the community. This past weekend, she offered an Oktoberfest-themed menu featuring a butternut squash soup, latkes, roast pork and stuffing, and a pumpkin cheesecake.

When not providing themed menus, the truck offers seasonally fresh salads and desserts, pickled vegetable appetizers, chilis, and easy to eat fresh handheld pie-like sandwiches, which are listed as pockets.

Eventually, Olds hopes that La Musette will be available for regular lunch service as well. It's currently open Tuesday through Fridays from 4:30 to 8:30 p.m, Saturdays from 12:30 to 8:30 p.m., and Sunday from Noon to 6:30 p.m..
