Courier Cookbook Salad Dressings

Everyone needs a few go-to salad dressings, whether to ramp up a salad or top pasta, potatoes, or use as a sandwich condiment. Here are a few favorites from our community.

CAESAR SALAD DRESSING

Adapted from Once Upon A Chef by Jenn Segal

"Super easy and flavorful - we love Caesar's and it's our new favorite dressing."

Ingredients:

2 small garlic cloves, minced

1 teaspoon anchovy paste

2 tablespoons freshly squeezed lemon juice, from one lemon

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 cup mayonnaise

½ cup freshly grated Parmigiano-Reggiano cheese

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

Directions:

In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Adjust flavors as desired.

CHINESE CHICKEN SALAD DRESSING

"This dressing was introduced to me by Marlene Sorosky, a cookbook author and chef, who made it at a Chinese Chicken Salad Bar I attended at a bridal shower. It was absolutely delicious and never fails to impress a crowd. Don't let the word "ketchup" deter you. It is the 'secret ingredient.' Trust me."

Ingredients:

1/3 cup soy sauce

1/3 cup canola or vegetable oil

2 T honey

3 T ketchup

1 tsp ground mustard

(modify portions to taste)

Directions:

Put in a jar and shake. Can be made ahead of time.

HONEY MUSTARD VINAIGRETTE

Ingredients:

2/3 tsp Dijon Mustard

Eyeball apple cider vinegar and oil (less oil)

Dash of salt

Dash of pepper

Add agave or honey to taste

Directions:

Put ingredients in a jar and shake.

BASIC VINAIGRETTE

"A go-to in the Shaw family."

Ingredients:

Red wine vinegar (or balsamic)

Olive oil

Crushed garlic

Salt

Pepper

Parsley or other herbs you like (oregano, basil, Italian parsley)

Directions:

Put ingredients in a jar and shake.

Hidden Valley Ranch Dressing is a staple in many homes. Just throw in some mayonnaise, milk and maybe some sour cream or yogurt and whisk with that amazing packet of flavor.
