Cimmini's Italian to rebrand as Coach's Creole Kitchen

With the announcement of Coach Prime's contract extension, Cimmini's Italian restaurant has decided to rebrand as Coach's Creole Kitchen, bringing a bold new look and menu to Niwot.

The move comes after University of Colorado head football coach Deion "Prime" Sanders was reportedly spotted dining at the restaurant last year. According to the restaurant staff, the visit left a lasting impression. "We realized we weren't just serving food, we were serving the future of Buff football," waiter Jack Arlow said.

While Cimmini's ownership has not confirmed any official connection to Coach Prime, they say the rebrand is a fun tribute to the excitement he has brought to the region. "We ain't hard to find," the restaurant's owner, Willie McCartney, joked. "But we had to step it up, because when you look good, you feel good, and when you feel good, you eat good."

Coach's Creole Kitchen will feature a menu that blends classic Southern comfort food with Creole favorites. "Niwot has never seen anything like this," McCartney said. "We know Coach has been looking for some authentic Southern food, and we thought, 'Who better than us?'"

The rebrand brings a championship-caliber menu, featuring dishes that embody the Coach Prime philosophy. New items will include the Prime Rib Po'Boy, a savory sandwich piled high with tender, spiced prime rib, the Half Back Rack of Ribs, slow-cooked to perfection with a zesty Creole glaze, and the Quarterback Jambalaya, a hearty dish loaded with shrimp, sausage, and chicken, served with a side of "Unnecessary Roughness" Cajun fries.

All dishes will have a Transfer Portal Toppings option, allowing diners to swap out any ingredient. Or they can have it both ways with the Hunter Special, a combination that includes all toppings.

"Some people might not like the change, but that's okay," employee Whitey Byron said. "They may not believe in us, but guess what? We believe."

To complete the transformation, the restaurant's interior is also getting a major facelift. Cimmini's Italian décor is being replaced with a bold Buffs-themed aesthetic featuring black and gold accents, football memorabilia, and neon signs that proudly declare "We Ain't Hard to Find." A mural of Coach Prime himself is currently in progress on one of the walls.

Some customers have been caught off guard, "I thought this was an Italian place," a diner named Miss Peggy said. "Now there's no spaghetti and the food comes with motivational speeches."

While some loyal Cimmini's customers might be hesitant about the drastic shift from Italian cuisine to Southern fare, ownership insists that the change will bring some of the electricity Boulder feels during football season to Niwot.

"This isn't just about food. It's about creating a dining experience that matches the excitement surrounding CU football," McCartney said. "Coach Prime has put Boulder back on the map, and we want to be a part of that."
